Banana Pancakes

They look a bit sloppy in the pan and you have to be careful flipping them in the pan but they taste gooooddddd. Especially with strawberries : )

Serves 1

INGREDIENTS

1 banana
1 egg white
1/4 tsp vanilla
1 cup oats
1/8 tsp bicarbonate of soda
Salt

METHOD

1 In a mug or small bowl, crack the egg and separate the white. Mash the banana in a bowl then add the egg white and mix with the vanilla
2 Add in oats until it forms a batter, I wrote a cup but to be honest just mix them in gradually until it looks the thickness that you want (I wanted quite thick pancakes). Add in the salt ad bicarbonate of soda
3 Heat up a frying pan and add a little butter. Spoon in as much mix as you want for your pancake, I used this to make four small ones. Then, using a fish slice squash down the pancake to make sure the middle cooks.
4 Loosen the bottom (around the edges first) using the fish slice and flip. You might have to tip the pan and use the fish slice to flip it without it breaking.
5 Serve with fruit, chocolate spread, syrup or whatever you want : )
