Blondies with Chocolate Chips

My dad says he doesn’t like brownies becasue they’re too rich so I made blondies instead which are essentially the EXACT SAME THING but he is obsessed with them now so I feel like that is all I need to say.


112g butter, melted
1/2 cup packed dark brown sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon of vanilla
1/2 teaspoon baking powder
1/8 teaspoon baking soda
Pinch of salt
1 cup (128 g) plain flour
1/3 cup (60 g) chocolate chips, mix milk and dark
**you could also substitute the chocolate for fudge pieces or walnuts or whatever you fancy


1 Preheat the oven to 175°C. Line and lightly grease an 8×8-inch pan (20 cm x 20 cm).
2 Melt butter and mix together with sugar in a bowl. Add the egg and vanilla and whisk.
3 Add the flour, baking soda, baking powder, and salt, mix it all together. Once combined fully, add the chocolate chips
4 Pour into the tin and spread. Bake for around 18 mins or until a skewer inserted into the centre comes out clean (even to get chewy centres the skewer should still come out clean). You can keep baking for longer but they won’t be as gooey in the middle.
