Chewy Double Chocolate Cookies

These are the best cookies you could ever make theyre crispy on th eedges but chewy in the middle and they taste insane.


2 eggs
225g margarine or butter
225g light brown sugar
175g caster sugar
1 tsp vanilla extract
300g plain flour
90g cocoa powder
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
pinch of salt
100g dark chocolate chips
100g white chocolate chips


1 Preheat the oven to fan 160C and line a baking sheet with parchment paper.
2 In a large bowl cream together the butter and both sugars.
3 Once fully combined add the eggs individually, then add the vanilla extract.
4 Add the flour, cocoa powder, baking powder, bicarbonate of soda and salt. Fold into the butter mixture.
5 Add the chocolate chips and roll into balls, it should make about 15 balls of cookie dough. Refridgerate for about an hour.
6 Heat the oven to 160C fan and place about five balls on one large baking tray. Press them down slightly to make discs about 3/4 and inch thick (unless you want quite tall cookies but personally I don’t).
7 Bake for about 10-13 minutes. Leave to cool for a little before eating (as tempting as it is they stay warm even when you leave them for a few minutes it’s just that they are too soft to even move if you try adn eat them just when they come out.
