Chickpea Mash

INGREDIENTS

1/2 tin chickpeas
3 salad tomatoes (basically they’re medium tomatoes)
1/2 onion
1/2 tbsp garlic powder
1 tbsp white wine vinegar
1 tbsp lemon juice
generous amount of salt and pepper
nutritional yeast / cheese
bunch of corriander and/or mixed dried herbs

METHOD

1 Dice your onion and fry in a little oil (unless you like raw onion then go for that i just don’t)
2 Mash your chickpeas in a bowl with a fork and add the salt, pepper and garlic
3 Dice up you tomatoes and add to the bowl with the fried onion.
4 Finely chop the corriander and add to the mix with the lemon, vinegar and dried herbs.
5 Stir through some finely grated cheese or nutritional yeast and serve with whatever you want. Mix in some mustard if thats your thing. I ate it with a vegetarian mushroom steak
