Don’t Throw away your Cauliflower leaves

Roast the leaves from your cauliflower in the oven at 180c with some paprika, oil salt and pepper for anywhere between 30-40 minutes. The stem part goes soft and the leaves are crispy like curly kale.

You can also roast the chunky part of broccoli stems and that tastes just as good.
