Fajita Spinach Salad

INGREDIENTS

Some kind of meat substitite, I used dehydrated soya
1 tsp Cumin
1 tsp Smoked paprika
1 tsp Paprika
Salt and Pepper
1 Onion
1 Pepper
1/2 tbsp Garlic powder
1/2 Can black beans, rinsed
Handful of Spinach
1 tsp lemon juice
1 tsp white wine vinegar
Salad cream + balsamic to serve (or whatever you want to dress your salad with)
Chillli Flakes

METHOD

1 Slice onion and fry with the garlic and a little oil, salt and pepper
2 Once brown add the spices, pepper and meat substitute. Once cooked add the black beans and stir through.
3 Remove from the heat and stir through the lemon and white wine vinegar
4 Plate up with the spinach and salad cream and whatever dressing you choose. Sprinkle over some chilli flakes and dried herbs if you want to
