Ginger, Oat and Raisin Cookies (GF)

Everyone I’ve given these biscuits to has asked me for the recipe so that kind of says more than I can.

240 g oats
1 tablespoon ground ginger
1 teaspoon baking soda
1/2 teaspoon fine salt
112g Flora or room temperature butter
1 cup granulated caster sugar
1/4 cup grated fresh ginger
1 egg
1/4 cup honey
Handful of raisins
Sugar, for rolling

1 In a large bowl, using a mixer or wooden spoon, beat butter and granulated sugar together until combined and smooth. Beat in fresh ginger, egg, and honey
2 In a small bowl measure out and mix the oats, ground ginger, baking soda, and salt. Add to the sugar mix then fold in the raisins.
3 Refrigerate dough for 30-60mins. Meanwhile line 2 baking sheets with parchment paper and preheat oven to 180C (160C fan)
4 Scoop dough into 1 inch balls, roll in sugar and place onto baking sheet, space out the balls as the cookies spread a lot (to get thicker smaller cookies refrigerate again for 30 mins)
5 Bake for around 16 minutes, rotating halfway. Let cool on baking sheets
