Roasted Jackfruit

this is infinitely better with coleslaw


1 tin Jackfruit
garlic powder
smoked paprika
parsley (dry or fresh whatever you have)
spring onions
mixed herbs
lemon juice


1 Preheat the oven to 180C and line a baking tray or tin with parchment paper.
2 Drain the jackfruit, pull it apart slightly and mix it with the garlic, paprika, smoked paprika, salt, pepper, parsley, herbs.
3 Roast it in the oven for about 40 minutes but the student oven is so shit that it can take anywhere from like 20 mins to an hour and a half.
4 Take it out and stir through chopped spring onions and lemon juice and put it in the oven for about another 5/10 mins while you prep any salad or wrap of anything that you want with it
5 Plat up and enjoy – wiht coleslaw (I am sad becasue I didn’t have coleslaw when I ate it in the pic 🙁 )
