Serves 2
INGREDIENTS
veg, I used mushrooms and pepper
1 large onion or 2 small
1/2 tbsp garlic powder
salt and pepper
1tsp smoked paprika
1 tbsp tomato paste
1/2 can chickpeas
1 tin of tomatoes
2 tbsp nutritional yeast
1 tbsp lemon juice
1 1/2 tbsp ketchup
1 tbsp balsamic vinegar
1 stock cube
chilli flakes
dried herbs (would recommend oregano but any work)
approx. 8 vegetarian meatballs
cheese to serve
METHOD
1 In a large pan, fry off onion in a little oil with garlic powder salt and pepper. Add mixed veg and cook until soft.
2 Add the smoked paprika, tomato paste and mix around until all coated.
3 Add the tin of tomatoes and fill half the can with water (to rinse) and add. 4 Crumble in the stock and add the lemon juice, balsamic, ketchup and nutritional yeast.
5 Add the dried herbs and leave on the heat until sauce is desired consistency
6 Cook the meatballs according to instructions and serve with chilli flakes, cheese and pasta if thats your thing.
