There are no words, these are incredible. They take about an hour to make (which in terms of cinnamon rolls is pretty quick) and are delicious warm out the oven. If you’re feeling fancy mix together some cream cheese frosting (recipe at the bottom) but to be honest I like them plain best.
INGREDIENTS
1 cup milk
1/2 cup butter (I used Flora) (split into two 1/4 cup measures)
3 cups plain flour (extra for dusting the surface)
1/2 cup caster sugar (split into two 1/4 cup measures)
1/2 teaspoon salt
2 1/4 teaspoons instant yeast
1 egg
1/4 cup packed brown sugar
2 tablespoons cinnamon
METHOD
1 Grease and line a square baking tin, then in a large bowl, mix together the flour, 1/4 cup caster sugar and salt until combined.
2 Put the milk and 1/4 cup butter in a mug and microwave for 1 minute. Stir then heat in 20 second intervals until the butter has completely melted. Sprinkle over the yeast and briefly stir.
3 Add the yeast mixture and egg to the flour bowl and mix until combined. Then place on a lightly floured surface and knead for a few minutes until the dough is completely smooth. Place it in a greased bowl, cover with a damp towel and let rest for 10 minutes.
4 While the dough rests, make the cinnamon sugar filling by combining the remaining 1/4 cup caster sugar, brown sugar and ground cinnamon.
5 After 10 mins turn the dough out onto a floured work surface and use a floured rolling pin to roll the dough into a large rectangle. Spread the remaining 1/4 cup of butter over the entire surface of the dough, then sprinkle with the cinnamon and sugar mixture.
6 Tightly roll up the dough, starting on one of the longer sides and dusting off flour as you go. Use a knife to slice off the two ends of the roll as they tend to be a little smaller and more uneven. Cut the roll into 11 or 12 equal pieces.
7 Place each of the cut cinnamon rolls into the tin. Cover with a damp towel and leave it in a warm place to rise for 25 minutes. Preheat the oven to fan 180C.
8 Whilst the dough is rising you can make the icing if you feel like it (see recipe at the bottom).
9 After 30 mins the rolls will have risen. Put in the oven (without the damp towel on it) and bake for 15-20 minutes, or until the rolls are golden and cooked through. Remove and let cool on a wire rack for at least 5 minutes.
To make icing;
Beat together some cream cheese, icing sugar and vanilla extract. You can also add a bit of room temp butter (Flora beats easier) but if you don't I would recommend adding a little salt :)
