this is infinitely better with coleslaw
INGREDIENTS
1 tin Jackfruit
garlic granules
paprika
smoked paprika
parsley (dry or fresh whatever you have)
spring onions
mixed herbs
lemon juice
salt
pepper
*coleslaw*
METHOD
1 Preheat the oven to 180C and line a baking tray or tin with parchment paper.
2 Drain the jackfruit, pull it apart slightly and mix it with the garlic, paprika, smoked paprika, salt, pepper, parsley, herbs.
3 Roast it in the oven for about 40 minutes continuing to mix roud so it doesn’t dry out.
4 Take it out and stir through chopped spring onions and lemon juice and put it in the oven for about another 5/10 mins while you prep any salad or wrap of anything that you want with it.
5 Plate up and enjoy – with coleslaw (I am sad becasue I didn’t have coleslaw when I ate it in the pic 🙁 )
